Description

Deliciously marinated chicken skewers infused with peanut butter, soy sauce, and spices, perfect for grilling.


Ingredients

  • 1 lb Chicken Breast, cut into 1-inch cubes
  • 1/4 cup Peanut Butter
  • 1/4 cup Soy Sauce (low-sodium)
  • 2 tbsp Honey
  • 2 tbsp Sriracha
  • 3 cloves Garlic, minced
  • 1 tbsp Ginger, grated
  • 2 tbsp Vegetable Oil
  • 2 Green Onions, chopped

Instructions

  1. In a medium bowl, whisk together peanut butter, soy sauce, honey, Sriracha, minced garlic, and grated ginger until smooth to make the marinade.
  2. Trim the chicken breast of any fat and cut it into 1-inch cubes.
  3. Add the chicken cubes to the marinade and toss until well coated. Cover and refrigerate for at least 15 minutes.
  4. Preheat your grill to medium heat. Thread the marinated chicken onto skewers.
  5. Grill the skewers for about 5-7 minutes per side, until cooked through and with grill marks.
  6. Remove from the grill, let rest for a few minutes, and garnish with chopped green onions before serving.

Notes

Best when marinated for at least 30 minutes for flavor absorption. Avoid over-marinating to prevent mushy texture.
