Ingredients
- Dumplings (meat or vegetarian)
- Coconut Milk
- Red Curry Paste
- Chicken or Vegetable Broth
- Fresh Vegetables (carrots, bell peppers, spinach)
- Garlic
- Ginger
- Optional Garnishes (coriander, lime juice)
Instructions
- Prepare the Broth: In a large pot, heat some oil over medium heat. Add minced garlic and grated ginger. Sauté for about 1-2 minutes until fragrant.
- Add the Vegetables: Add chopped carrots and bell peppers to the pot. Stir and cook for about 5 minutes until they begin to soften.
- Mix in the Curry Paste: Stir in the red curry paste and toast it for a minute to enhance its flavors.
- Incorporate Coconut Milk and Broth: Pour in the coconut milk and broth, stirring to combine. Bring to a gentle boil, then reduce heat to simmer for 10 minutes.
- Cook the Dumplings: Add your dumplings to the pot and cook according to package instructions, usually around 8-10 minutes.
- Add Additional Greens: Toss in fresh spinach during the last few minutes of cooking until wilted.
- Adjust Seasoning and Serve: Taste and adjust seasoning. Serve hot, garnished with fresh coriander.
Notes
For a vegan option, use plant-based dumplings and substitute coconut milk with almond or soy milk.
