Ingredients

  • ½ cup melted butter
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • 2 cups freshly grated carrots
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix melted butter and graham cracker crumbs until it resembles wet sand. Press the mixture into the bottom of a springform pan and bake for 10 minutes. Let cool.
  3. Beat cream cheese and sugar together until smooth. Add sour cream and eggs, mixing after each addition.
  4. Fold in grated carrots, cinnamon, nutmeg, baking powder, and salt carefully.
  5. Pour the carrot cake mixture into the prepared crust and spread evenly.
  6. Bake for 50 to 60 minutes, until the center is set but slightly jiggly.
  7. Turn off the oven and crack the door, allowing the cheesecake to cool gradually before transferring it to the refrigerator to chill for at least 4 hours.
