- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- ½ cup sour cream
- 2 large eggs
- 2 cups freshly grated carrots
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp baking powder
- ½ tsp salt
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix melted butter and graham cracker crumbs until it resembles wet sand. Press the mixture into the bottom of a springform pan and bake for 10 minutes. Let cool.
- Beat cream cheese and sugar together until smooth. Add sour cream and eggs, mixing after each addition.
- Fold in grated carrots, cinnamon, nutmeg, baking powder, and salt carefully.
- Pour the carrot cake mixture into the prepared crust and spread evenly.
- Bake for 50 to 60 minutes, until the center is set but slightly jiggly.
- Turn off the oven and crack the door, allowing the cheesecake to cool gradually before transferring it to the refrigerator to chill for at least 4 hours.
Notes
For best results, allow the cheesecake to chill overnight in the refrigerator before serving.
