- 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
- 2 cups potatoes (Russets or Yukon golds), diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, chopped
- 4 cups beef broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper, to taste
- 1 teaspoon thyme
- 2 bay leaves
- 1/4 cup grated Parmesan cheese (optional, for garnish)
Instructions
- In a large pot, melt 1 tablespoon of butter over medium-high heat. Add the steak pieces, seasoned with salt and pepper, and sear until browned, about 4-5 minutes. Remove and set aside.
- Add another tablespoon of butter to the same pot. Sauté the onion, garlic, carrots, and celery for 5-7 minutes until the onion is translucent.
- Return the seared steak to the pot, add diced potatoes, beef broth, thyme, and bay leaves. Bring to a simmer and cook for 20-25 minutes until the potatoes are tender.
- Stir in the heavy cream and simmer for an additional 5-10 minutes. Adjust seasoning as needed.
- Remove bay leaves. Blend a portion for creaminess if desired, then serve garnished with Parmesan cheese.
Notes
Serve with crusty bread and a fresh salad. Consider adding hot sauce for extra heat.
