- Yukon Gold Potatoes
- 3 tablespoons Unsalted Butter
- Chicken Stock
- Fresh Rosemary
- 2–3 Garlic Cloves
- Sea Salt
- Black Pepper
Instructions
- Peel and cut potatoes into 2-inch oval shapes. Rinse under cold water.
- Melt butter in a frying pan over medium-high heat. Sear potatoes cut-side down until golden brown.
- Flip potatoes, add garlic, rosemary, and sea salt; sear for an additional few minutes.
- Pour in chicken stock to come halfway up potatoes.
- Reduce heat, cover, and simmer until fork-tender, occasionally basting.
- If desired, reduce liquid further and baste with remaining melted butter before serving.
Notes
For a healthier version, use olive oil and vegetable stock. Ensure not to overcrowd the pan for perfect searing.
