Description

Delicious keto-inspired donuts made with cottage cheese and blueberries, low in carbs and high in protein.


Ingredients

  • 1 cup cottage cheese
  • 1 cup almond flour
  • 1 cup blueberries
  • 2 large eggs
  • 1/4 cup keto-friendly sweetener
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your donut pan with coconut oil.
  3. In a medium bowl, combine cottage cheese, eggs, coconut oil, and vanilla extract, stirring until smooth.
  4. In another bowl, whisk together almond flour, sweetener, baking powder, and a pinch of salt.
  5. Gently fold the dry mixture into the wet ingredients until just combined.
  6. Stir in blueberries, reserving a few for topping if desired.
  7. Fill each donut cavity with the batter, about 3/4 full.
  8. Bake for about 20 minutes, until golden brown and a toothpick comes out clean.
  9. Allow to cool in the pan for a few minutes before transferring to a wire rack.
