Delicious keto-inspired donuts made with cottage cheese and blueberries, low in carbs and high in protein.
Ingredients

- 1 cup cottage cheese
- 1 cup almond flour
- 1 cup blueberries
- 2 large eggs
- 1/4 cup keto-friendly sweetener
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp coconut oil
Instructions
- Preheat your oven to 350°F (175°C).
- Lightly grease your donut pan with coconut oil.
- In a medium bowl, combine cottage cheese, eggs, coconut oil, and vanilla extract, stirring until smooth.
- In another bowl, whisk together almond flour, sweetener, baking powder, and a pinch of salt.
- Gently fold the dry mixture into the wet ingredients until just combined.
- Stir in blueberries, reserving a few for topping if desired.
- Fill each donut cavity with the batter, about 3/4 full.
- Bake for about 20 minutes, until golden brown and a toothpick comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
Notes
Store leftovers in an airtight container at room temperature for up to three days, or refrigerate for up to a week.
