Ingredients

  • 1/2 cup powdered sugar
  • 1/2 cup graham cracker crumbs
  • 1 cup fresh raspberries
  • 1 tsp vanilla extract
  • 8 oz white chocolate, melted

Instructions

  1. In a mixing bowl, combine cream cheese and powdered sugar, mixing until smooth and creamy.
  2. Add graham cracker crumbs and vanilla extract to the mixture, folding until fully incorporated.
  3. Gently mash raspberries and fold them into the mixture until evenly distributed.
  4. Using a tablespoon or small cookie scoop, portion out the mixture and roll it into balls.
  5. Chill the formed truffles on a parchment-lined baking sheet for at least 30 minutes.
  6. Melt white chocolate and dip each chilled truffle, ensuring they are evenly coated.
  7. Return the coated truffles to the sheet and let them set until the chocolate hardens.

Notes

For a healthier version, substitute Greek yogurt for cream cheese and dark chocolate for white chocolate.
