- 1 cup crushed pineapple
- ¾ cup granulated sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon baking soda

- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan with cooking spray or butter.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In another bowl, blend together the sugar and vegetable oil until slightly fluffy. Add the eggs one at a time and fully incorporate before adding the next. Stir in the crushed pineapple and vanilla extract.
- Gently fold the wet ingredients into the dry ingredients using a spatula.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
Notes
For a healthier option, consider using honey or maple syrup instead of sugar, and Greek yogurt instead of oil.
