  • ½ cup vegetable oil
  • 2 large eggs

  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan with cooking spray or butter.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. In another bowl, blend together the sugar and vegetable oil until slightly fluffy. Add the eggs one at a time and fully incorporate before adding the next. Stir in the crushed pineapple and vanilla extract.
  5. Gently fold the wet ingredients into the dry ingredients using a spatula.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.

Notes

For a healthier option, consider using honey or maple syrup instead of sugar, and Greek yogurt instead of oil.
