  • 1 teaspoon Thyme (fresh or dried)
  • 2 Bay Leaves
  • 1 cup Heavy Cream
  • Salt and Pepper to taste
  • Fresh Parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Shred the rotisserie chicken into bite-sized pieces and chop the onions, mushrooms, carrots, and celery.
  2. Sauté the Aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the onions and sauté for about 3 minutes until translucent. Toss in the garlic and cook for an additional minute until fragrant.
  3. Add Vegetables: Mix in the carrots and celery, sautéing for another 5 minutes.
  4. Add Mushrooms: Gently fold in the mushrooms, stirring occasionally until they begin to wilt, about 5 minutes.
  5. Create the Base: Pour in the chicken broth and add the shredded rotisserie chicken, thyme, and bay leaves. Bring the mixture to a gentle simmer.
  6. Season and Simmer: Season with salt and pepper, cooking for 15-20 minutes.
  7. Add the Cream: Stir in the heavy cream and heat through for a few minutes. Remove bay leaves before serving.
