- 1 Rotisserie Chicken, shredded
- 8 ounces mixed Mushrooms (button, cremini, shiitake)
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 2 Carrots, diced
- 2 stalks Celery, chopped
- 4 cups low-sodium Chicken Broth
- 1 teaspoon Thyme (fresh or dried)
- 2 Bay Leaves
- 1 cup Heavy Cream
- Salt and Pepper to taste
- Fresh Parsley, chopped (for garnish)
Instructions
- Prepare the Ingredients: Shred the rotisserie chicken into bite-sized pieces and chop the onions, mushrooms, carrots, and celery.
- Sauté the Aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the onions and sauté for about 3 minutes until translucent. Toss in the garlic and cook for an additional minute until fragrant.
- Add Vegetables: Mix in the carrots and celery, sautéing for another 5 minutes.
- Add Mushrooms: Gently fold in the mushrooms, stirring occasionally until they begin to wilt, about 5 minutes.
- Create the Base: Pour in the chicken broth and add the shredded rotisserie chicken, thyme, and bay leaves. Bring the mixture to a gentle simmer.
- Season and Simmer: Season with salt and pepper, cooking for 15-20 minutes.
- Add the Cream: Stir in the heavy cream and heat through for a few minutes. Remove bay leaves before serving.

Serve with crusty bread or top with grated parmesan for added flavor.
