Description

Delightful eclairs filled with luscious strawberry cream, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1 cup water
  • 4 large eggs
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 2 cups fresh strawberries
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
  2. Once boiling, reduce heat and add flour all at once, stirring until a dough forms.
  3. Cook the dough over low heat for 1-2 minutes until it pulls away from sides and forms a ball.
  4. Transfer the dough to a bowl and let it cool for a few minutes.
  5. Add eggs one at a time, mixing on medium speed until fully incorporated.
  6. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  7. Pipe 4-inch long lines of dough on the baking sheet, spacing them 2 inches apart.
  8. Bake for 25-30 minutes until golden brown and puffed.
  9. In a mixing bowl, beat heavy cream and powdered sugar until soft peaks form.
  10. Fold in pureed strawberries and vanilla extract until fully combined.
  11. Once eclairs are cool, make a slit in each and fill with strawberry cream.
  12. Dust with powdered sugar before serving.

Notes

Store filled eclairs in an airtight container in the refrigerator and consume within 1-2 days.
