Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter
- 1 cup water
- 4 large eggs
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 cup heavy cream
- 2 cups fresh strawberries
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
- Once boiling, reduce heat and add flour all at once, stirring until a dough forms.
- Cook the dough over low heat for 1-2 minutes until it pulls away from sides and forms a ball.
- Transfer the dough to a bowl and let it cool for a few minutes.
- Add eggs one at a time, mixing on medium speed until fully incorporated.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pipe 4-inch long lines of dough on the baking sheet, spacing them 2 inches apart.
- Bake for 25-30 minutes until golden brown and puffed.
- In a mixing bowl, beat heavy cream and powdered sugar until soft peaks form.
- Fold in pureed strawberries and vanilla extract until fully combined.
- Once eclairs are cool, make a slit in each and fill with strawberry cream.
- Dust with powdered sugar before serving.
Notes
Store filled eclairs in an airtight container in the refrigerator and consume within 1-2 days.
