Ingredients

  • 8 oz Mascarpone Cheese
  • 1/2 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1/2 cup Espresso (cooled)
  • 1 cup Chocolate Cookies (crushed)
  • 1/4 cup Cocoa Powder
  • 4 oz Dark Chocolate (for coating)

Instructions

  1. Prepare your workspace by gathering all the ingredients and equipment.
  2. In a medium mixing bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy, about 2-3 minutes.
  3. Brew a strong espresso, let it cool slightly, then stir it into the mascarpone mixture.
  4. Crush the chocolate cookies into fine crumbs and fold them into the mascarpone mixture gently.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  6. Once chilled, form the mixture into small balls, about 1-inch in diameter.
  7. Melt dark chocolate in a microwave-safe bowl, then dip each truffle in the melted chocolate.
  8. Roll the coated truffles in cocoa powder to finish.
  9. Refrigerate for another 15 minutes to set.

Notes
