- 1/2 cup Powdered Sugar
- 1 tsp Vanilla Extract
- 1/2 cup Espresso (cooled)
- 1 cup Chocolate Cookies (crushed)
- 1/4 cup Cocoa Powder
- 4 oz Dark Chocolate (for coating)
Instructions
- Prepare your workspace by gathering all the ingredients and equipment.
- In a medium mixing bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy, about 2-3 minutes.
- Brew a strong espresso, let it cool slightly, then stir it into the mascarpone mixture.
- Crush the chocolate cookies into fine crumbs and fold them into the mascarpone mixture gently.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Once chilled, form the mixture into small balls, about 1-inch in diameter.
- Melt dark chocolate in a microwave-safe bowl, then dip each truffle in the melted chocolate.
- Roll the coated truffles in cocoa powder to finish.
- Refrigerate for another 15 minutes to set.

Notes
For a lighter version, substitute Greek yogurt for mascarpone, and use honey or agave syrup instead of powdered sugar.
