- 1 cup quinoa
- 1 cup dark chocolate (70% cocoa)
- 3 tablespoons maple syrup
Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water, bring to a boil, cover, and simmer for 15 minutes. Fluff and let cool.
- Melt dark chocolate in a microwave-safe bowl, heating in 30-second intervals until smooth.
- In a mixing bowl, combine cooked quinoa, melted chocolate, and maple syrup, stirring until evenly coated.
- On a lined baking sheet, drop spoonfuls of the mixture, pressing down to form flat shapes.
- Preheat oven to 350°F (175°C). Bake for 15 minutes until firm and slightly crispy. Allow to cool before removing.
Notes
Ensure quinoa is rinsed well to remove bitterness. Store in an airtight container for up to a week.
