Instructions
- In a medium bowl, mix peanut butter, powdered sugar, and graham cracker crumbs until a thick dough forms. If crumbly, add a teaspoon of water or milk at a time until it comes together.
- Scoop about 1 tablespoon of dough and roll it between your palms into a 1-inch ball. Place on a parchment-lined tray. If your peanut butter is very soft, chill the tray for 5–10 minutes to help set.
- Melt the chocolate chips with 1 teaspoon coconut oil in 20–30 second bursts in the microwave, stirring between intervals until smooth and glossy.
- Dip each ball into the melted chocolate, using a fork to coat completely. Gently shake off any excess and return to the tray. For a thicker shell, chill briefly and dip again.
- Chill the coated balls 15–20 minutes until firm and shiny. Keep them refrigerated until serving; they’ll stay tasty for up to a week.
