Description

Ingredients

  • 2 cups almond flour
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar (or coconut sugar)
  • 2 large eggs (or flax eggs)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8-inch baking pan with parchment paper.
  3. In a mixing bowl, combine almond flour, baking powder, and salt.
  4. In another bowl, cream the butter and sugar together until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Gradually mix the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 25 minutes or until golden brown and a toothpick comes out clean.
  9. Allow to cool for 10 minutes before removing from the pan to cool completely on a wire rack. Slice and serve.

Notes

For a dairy-free version, substitute coconut oil for butter and use erythritol instead of sugar for a lower glycemic index.
