- 3 large Egg Whites
- 1 cup Granulated Sugar (preferably superfine)
- 1/4 cup Powdered Sugar
- 1 teaspoon Almond Extract
- 1 teaspoon Cornstarch (or arrowroot powder)
Instructions
- Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
- In a clean mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form (2-3 minutes).
- Gradually add granulated sugar, one tablespoon at a time, beating on high speed until stiff peaks form (5-7 minutes).
- Sift together the powdered sugar and cornstarch in a separate bowl, and gently fold into the egg whites without deflating the mixture.
- Add almond extract and gently fold until incorporated.
- Transfer the meringue to a piping bag and pipe onto prepared baking sheets.
- Bake for about one hour, until crisp outside but slightly soft inside; rotate halfway through.
- Let cool inside the oven with the door ajar to prevent cracking.
Notes
For a lower-calorie version, consider using stevia instead of granulated sugar.
