Ingredients

  • 1 cup Granulated Sugar (preferably superfine)
  • 1/4 cup Powdered Sugar
  • 1 teaspoon Almond Extract
  • 1 teaspoon Cornstarch (or arrowroot powder)

Instructions

  1. Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
  2. In a clean mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form (2-3 minutes).
  3. Gradually add granulated sugar, one tablespoon at a time, beating on high speed until stiff peaks form (5-7 minutes).
  4. Sift together the powdered sugar and cornstarch in a separate bowl, and gently fold into the egg whites without deflating the mixture.
  5. Add almond extract and gently fold until incorporated.
  6. Transfer the meringue to a piping bag and pipe onto prepared baking sheets.
  7. Bake for about one hour, until crisp outside but slightly soft inside; rotate halfway through.
  8. Let cool inside the oven with the door ajar to prevent cracking.

Notes
