Description

Ingredients

  • Spaghetti or Tonarelli
  • Pecorino Romano cheese
  • Freshly ground black pepper
  • Salt
  • Water

Instructions

  1. Bring a large pot of water to a rolling boil and add a generous amount of salt.
  2. Add spaghetti or tonarelli to the boiling water and cook until al dente (8-10 minutes).
  3. Finely grate about one cup of Pecorino Romano cheese.
  4. Toast freshly ground black pepper in a large skillet over medium heat for about a minute.
  5. Once pasta is cooked, reserve a cup of starchy pasta water and drain the pasta.
  6. Transfer the hot pasta to the skillet with the toasted pepper and mix well.
  7. Gradually add Pecorino Romano and reserved pasta water, mixing vigorously to create a creamy sauce.
  8. Serve immediately, garnished with extra Pecorino and black pepper.

Notes

Use freshly grated cheese for optimal flavor, and remember to reserve pasta water to achieve the perfect sauce consistency.
