A traditional Scottish comfort dish combining creamy potatoes and tender savoy cabbage, baked to perfection.
Ingredients

- 4 large potatoes (starchy varieties like Maris Piper or Russet)
- 2 cups savoy cabbage (or kale)
- 1 cup onions (or shallots)
- 1 cup shredded cheese (cheddar or dairy-free)
- 4 tablespoons unsalted butter (or olive oil)
- Salt and pepper to taste
- Milk or cream (optional, almond milk or coconut cream as alternatives)
Instructions
- Peel and chop the potatoes into equal-sized chunks and boil in salted water until fork-tender (approximately 20 minutes).
- In a skillet, heat 2 tablespoons of butter and sauté onions until soft (about 5-7 minutes).
- Stir in savoy cabbage, seasoning with salt and pepper, and cook until wilted (about 5 minutes).
- Drain the cooked potatoes, return them to the pot, and mash until smooth. Add milk or cream if desired.
- Fold in the cabbage and onion mixture along with remaining butter and shredded cheese. Mix until melted and combined.
- Transfer to a greased baking dish and bake at 400°F (200°C) for about 20 minutes until golden brown on top.
Notes
Garnish with fresh herbs and pair with a salad for a complete meal.
