Ingredients

  • 1 cup Olives (green and black mix)
  • 1 sheet Puff Pastry
  • 2 tbsp Fresh Herbs (thyme or oregano)
  • 2 tbsp Olive Oil
  • Greek Yogurt (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to about 1/4 inch thick and create circles for mini muffin tin.
  3. In a bowl, mix crumbled feta, chopped olives, fresh herbs, and olive oil.
  4. Spoon the filling into the pastry cups, filling them about 3/4 full.
  5. Bake for 20-25 minutes until golden brown.
  6. Let them cool slightly and serve with Greek yogurt on the side.

Notes

For a dairy-free option, substitute Greek yogurt with coconut or almond yogurt. Ensure to keep your ingredients at room temperature for better mixing.
