Description

Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1/2 cup low-sugar BBQ sauce
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes thoroughly. Prick each potato a few times with a fork.
  3. Place sweet potatoes on the oven rack and roast for about 45 minutes or until tender.
  4. In a large bowl, mix shredded chicken with BBQ sauce to taste.
  5. Remove sweet potatoes from the oven and cut them in half; fluff the flesh with a fork.
  6. Spoon the BBQ chicken mixture into each potato half.
  7. Top with shredded cheddar cheese and return to the oven for 10-15 minutes until cheese is melted.
  8. Garnish with chopped green onions and serve warm.

Notes

For a vegan option, substitute chicken with lentils or chickpeas and use nutritional yeast instead of cheese.
