- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1/2 cup low-sugar BBQ sauce
- 1 cup shredded sharp cheddar cheese
- 2 green onions, chopped
- 1 tablespoon extra virgin olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the sweet potatoes thoroughly. Prick each potato a few times with a fork.
- Place sweet potatoes on the oven rack and roast for about 45 minutes or until tender.
- In a large bowl, mix shredded chicken with BBQ sauce to taste.
- Remove sweet potatoes from the oven and cut them in half; fluff the flesh with a fork.
- Spoon the BBQ chicken mixture into each potato half.
- Top with shredded cheddar cheese and return to the oven for 10-15 minutes until cheese is melted.
- Garnish with chopped green onions and serve warm.
Notes
For a vegan option, substitute chicken with lentils or chickpeas and use nutritional yeast instead of cheese.
