These chewy brownies are rich, fudgy, and loaded with deep chocolate flavor. With shiny crinkle tops and an easy one-bowl method, they’re even better than box mix and guaranteed to impress at any gathering.
Ingredients
½ cup (1 stick) unsalted butter, melted and slightly cooled
2 tablespoons neutral oil (vegetable or canola)
1 cup granulated sugar
ÂĽ cup brown sugar, packed
2 large eggs + 1 egg yolk, room temperature
2 teaspoons vanilla extract
Âľ cup all-purpose flour
2 tablespoons cornstarch
½ cup unsweetened cocoa powder
½ teaspoon salt
1 cup semisweet chocolate chips
Optional: ½–1 cup chopped nuts (walnuts, pecans) or extra mix-ins
Instructions
Prep the pan: Preheat oven to 325°F (163°C). Line an 8×8-inch light metal baking pan with parchment paper, leaving an overhang for easy removal.
Melt butter: In a microwave-safe bowl or saucepan, melt butter. Let it cool slightly.
Whisk wet ingredients: In a large mixing bowl, whisk together melted butter, oil, granulated sugar, and brown sugar until glossy. Add eggs, yolk, and vanilla. Whisk until mixture thickens slightly.
Add dry ingredients: Sift in flour, cocoa powder, cornstarch, and salt. Gently fold until just combined—don’t overmix.
Stir in chocolate chips: Fold in semisweet chocolate chips (and nuts, if using).
Bake: Spread batter evenly in the prepared pan. Bake for 28–32 minutes, or until edges look set and a toothpick inserted in the center comes out with a few moist crumbs.
Cool and slice: Let brownies cool completely before lifting from the pan and cutting into squares.
Notes
For a larger batch: Double the recipe and bake in a 9×13-inch pan. Add 8–10 minutes to the bake time.
Storage: Store in an airtight container at room temp for 3 days, refrigerate for up to 5, or freeze for up to 3 months.
Flavor boost: Add 1 teaspoon espresso powder to deepen the chocolate flavor.
