Description

Delicious reinterpretation of classic Boston cream pie in cookie form, featuring soft cookies with rich chocolate and creamy vanilla filling.


Ingredients

  • 2 cups All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Unsalted Butter, softened
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Milk
  • 1 cup Powdered Sugar
  • 1 cup Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, granulated sugar, and brown sugar.
  3. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry mixture to the wet, stirring until just combined.
  6. Gently fold in the chocolate chips.
  7. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes, until the edges are set.
  9. Whisk powdered sugar and milk until smooth for filling.
  10. Spread vanilla cream on half of the cookies and top with another cookie to make a sandwich.
  11. Melt additional chocolate chips and drizzle over the assembled cookies.

Notes

For a lighter version, substitute butter with coconut oil and use plant-based milk.
