Description

Ingredients

  • 1 cup long-grain rice (Basmati or Jasmine)
  • 3 tablespoons unsalted butter
  • 2 medium yellow onions, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large skillet, melt the butter over medium heat. Add the sliced onions and sauté until golden-brown, about 10-12 minutes.
  3. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the rinsed rice to the skillet, stir to combine, and pour in the broth. Season with salt and pepper.
  5. Bring to a gentle simmer, cover, and reduce heat to low. Cook for 15 minutes or until the liquid is absorbed and rice is tender.
  6. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.

Notes

For a vegan option, substitute olive oil for butter and use vegetable broth. You can also try using brown rice for added fiber.
