4 tablespoons basil pesto

1 cup cherry tomatoes, halved

46 slices fresh mozzarella (or mozzarella pearls)

23 tablespoons sun-dried tomatoes, chopped (optional)

A handful of fresh basil leaves

A small handful of arugula

1 tablespoon melted butter (for brushing)

1 teaspoon sesame seeds (optional, for garnish)


Instructions

  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  • Slice the croissants horizontally, leaving one edge attached if possible.

  • Spread pesto on the bottom half of each croissant.

  • Layer mozzarella, followed by cherry tomatoes (cut side up) and optional sun-dried tomatoes.

  • Add fresh basil and arugula for brightness and a peppery bite.
