Ingredients
4 medium all-butter croissants (fresh or bakery-style)
4 tablespoons basil pesto
1 cup cherry tomatoes, halved
4–6 slices fresh mozzarella (or mozzarella pearls)
2–3 tablespoons sun-dried tomatoes, chopped (optional)
A handful of fresh basil leaves
A small handful of arugula
1 tablespoon melted butter (for brushing)
1 teaspoon sesame seeds (optional, for garnish)
Instructions
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Slice the croissants horizontally, leaving one edge attached if possible.
Spread pesto on the bottom half of each croissant.
Layer mozzarella, followed by cherry tomatoes (cut side up) and optional sun-dried tomatoes.
Add fresh basil and arugula for brightness and a peppery bite.
Close the croissants, then brush the tops with melted butter. Sprinkle sesame seeds if desired.
