  • In a large bowl, toss the sliced apples with lemon juice (if using), granulated sugar, brown sugar, flour or cornstarch, cinnamon, nutmeg, salt, and vanilla. Stir until every piece is glossy and coated; the mixture should look juicy but not soupy.
  • Pile the apple mixture into the crust-lined pan. Drizzle 2–3 tablespoons of caramel sauce over the apples, then dot with small butter pieces. If you like extra caramel, reserve a little to drizzle after baking.
  • Brush the rim with a little water or milk. Lay the second crust on top, seal the edges with a fork or by pinching, and cut a few vents or weave a simple lattice. If the edges brown too quickly, tent with foil.
  • Bake 45–55 minutes, until the crust is golden and juices are bubbling around the edges. If the center looks a bit underdone, cover the edges and bake a few more minutes until set.
