Ingredients
- Pasta (penne or fettuccine, whole wheat or gluten-free optional)
- Leeks (sliced)
- Mushrooms (cremini or button, sliced)
- Gruyere Cheese (shredded)
- Heavy Cream
- Garlic (minced)
- Butter (unsalted)
- Fresh Parsley (chopped)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Prepare the Ingredients: Wash and slice the leeks and mushrooms.
- Caramelize the Leeks: Melt butter in a skillet, add leeks, and cook until caramelized (10-12 minutes).
- Sauté the Mushrooms: Add mushrooms to the skillet and cook until tender (5-7 minutes), adding garlic in the last minute.
- Cook the Pasta: Boil salted water and cook pasta until al dente, according to package instructions.
- Combine Ingredients: Drain pasta, add to skillet with leeks and mushrooms, and adjust consistency with reserved pasta water.
- Finish with Cream and Cheese: Add cream and cheese, stirring until melted and creamy. Season.
- Garnish and Serve: Remove from heat, sprinkle with parsley, and serve warm.
Notes
For a lighter version, substitute heavy cream with coconut or cashew cream. Store leftovers in an airtight container for up to three days.
