Description

A deliciously satisfying tart combining the sweetness of butternut squash with the savory depth of caramelized onions.


Ingredients

  • 1 medium Butternut Squash
  • 2 large Caramelized Onions
  • 1 ½ cups All-Purpose Flour
  • ½ cup + 2 tbsp Unsalted Butter, chilled and diced
  • 2 large Eggs
  • 1 cup Heavy Cream
  • ½ tsp Nutmeg
  • ½ tsp Salt
  • ÂĽ tsp Black Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel, seed, and dice the butternut squash, toss with olive oil and salt, and roast for 25-30 minutes.
  3. In a skillet, melt 2 tablespoons of butter and caramelize the onions for 15-20 minutes.
  4. Combine flour and salt in a bowl, cut in the chilled butter, and add cold water until dough forms. Refrigerate.
  5. In a bowl, whisk together eggs, heavy cream, nutmeg, pepper, and salt. Stir in roasted squash and caramelized onions.
  6. Roll out the chilled dough, fit it into a tart pan, and trim the edges.
  7. Pour the filling into the crust and smooth the top.
  8. Bake for 30 minutes or until the filling is set and the crust is golden brown.
  9. Cool slightly before slicing and serve warm or at room temperature.

Notes

Avoid overcrowding the tart and ensure you chill the dough for a flaky crust.
