- 4 medium-sized Bell Peppers
- 2 cups Cooked Chicken, shredded
- 1 cup Buffalo Sauce
- 4 oz Cream Cheese
- 1 cup Shredded Cheese (cheddar or mozzarella)
- 2 Green Onions, sliced
- 1 tsp Garlic Powder
- Salt and Pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash, slice the tops off, and remove the seeds of each bell pepper.
- In a large mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, shredded cheese (reserve some for topping), green onions, garlic powder, salt, and pepper. Mix well.
- Spoon the buffalo chicken mixture into each bell pepper, packing tightly, and top with reserved cheese.
- Place the stuffed peppers in a baking dish and bake for about 30 minutes until the peppers are tender and the cheese is bubbly.
- Remove from the oven, let cool for a few minutes, and garnish with extra green onions or ranch dressing.
Notes
To keep the peppers firm, avoid overcooking them. Reserve enough cheese for topping to achieve that gooey finish.
