Description

Transform leftover chicken into a zesty and impressive meal with these Cheesy Buffalo Chicken Stuffed Peppers, perfect for any occasion.


Ingredients

  • 4 medium-sized Bell Peppers
  • 2 cups Cooked Chicken, shredded
  • 1 cup Buffalo Sauce
  • 4 oz Cream Cheese
  • 1 cup Shredded Cheese (cheddar or mozzarella)
  • 2 Green Onions, sliced
  • 1 tsp Garlic Powder
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash, slice the tops off, and remove the seeds of each bell pepper.
  3. In a large mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, shredded cheese (reserve some for topping), green onions, garlic powder, salt, and pepper. Mix well.
  4. Spoon the buffalo chicken mixture into each bell pepper, packing tightly, and top with reserved cheese.
  5. Place the stuffed peppers in a baking dish and bake for about 30 minutes until the peppers are tender and the cheese is bubbly.
  6. Remove from the oven, let cool for a few minutes, and garnish with extra green onions or ranch dressing.

Notes

To keep the peppers firm, avoid overcooking them. Reserve enough cheese for topping to achieve that gooey finish.
