- 1 lb ground beef (or ground turkey for a lighter option)
- 1 cup white or brown rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, chopped
- 1 can diced tomatoes
- 1 can cream of mushroom soup
- 1 cup cheese (Cheddar or Mozzarella)
- Salt and pepper, to taste
- Italian herbs, to taste
- 1 cup vegetable broth or water
Instructions
- Gather all your ingredients and chop the onion, garlic, and bell peppers.
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
- Add the chopped onion, garlic, and bell peppers to the skillet and sauté for about 5 minutes until tender.
- Mix in the diced tomatoes, cream of mushroom soup, cooked rice, and your choice of seasonings. Stir thoroughly.
- Gently fold in half of the cheese, reserving the other half for topping.
- Pour the mixture into a greased 9×13-inch baking dish.
- Spread the reserved cheese on top.
- Preheat oven to 350°F (175°C) and bake for 25-30 minutes until bubbly and cheese is melted.
- Allow to cool for 5 minutes before serving.
Notes
For added crunch, serve with a side salad or top with sour cream or Greek yogurt. Customize with your choice of vegetables and cheese.
