- 4 Banana Peppers
- 8 oz Cream Cheese
- 1 cup Shredded Cheese (Cheddar or Monterey Jack)
- 1 lb Ground Turkey or Beef
- 2 cloves Garlic, minced
- 1 Onion, diced
- 4 cups Vegetable or Chicken Broth
- 1 can Diced Tomatoes
- 1 tsp Italian Seasoning
- Salt, to taste
- Pepper, to taste
Instructions
- Wash the banana peppers, cut off the tops, and remove seeds.
- In a large pot, sauté diced onion in olive oil until translucent.
- Add minced garlic and cook for 1 minute.
- Stir in ground turkey or beef; cook until browned.
- Add chopped banana peppers; cook for an additional 3 minutes.
- Pour in diced tomatoes and broth; bring to a simmer.
- Stir in cream cheese and shredded cheese until melted.
- Serve hot, garnished with cheese or herbs if desired.
Notes
For a lighter option, substitute cream cheese with ricotta or use low-fat cream cheese. This soup is also freezer-friendly.
