Ingredients

Instructions
Make the Cherry Syrup:
In a medium saucepan, combine cherries, sugar, and lemon juice. Cook over medium heat until the cherries soften and release their juices, about 10–12 minutes. Mash lightly, then strain the mixture to collect the syrup. Stir in Amaretto and let cool completely.Prepare the Mascarpone Filling:
In a large bowl, whisk mascarpone, powdered sugar, vanilla, and almond extract until smooth. In a separate bowl, whip heavy cream to soft peaks, then gently fold into the mascarpone mixture. Add 1–2 tablespoons of the cooled cherry syrup for a hint of pink color and flavor.Assemble the Tiramisu:
Quickly dip each ladyfinger into the cherry syrup and layer them in an 8–9 inch square dish. Spread half the mascarpone mixture over the top. Repeat with a second layer of soaked ladyfingers and remaining cream. Smooth or pipe the top for a decorative finish.Chill & Serve:
Drizzle with extra cherry syrup, garnish with fresh cherries, and cover. Chill for at least 6 hours (overnight preferred) before serving. Slice or scoop to reveal those gorgeous pink-and-white layers.
Notes
No Amaretto? Use almond extract or cherry juice for a non-alcoholic version.
