2 cups all-purpose flour

1 cup granulated sugar

2 tsp baking powder

½ tsp salt

2 large eggs (room temperature)

1 cup milk (whole or 2%)

½ cup vegetable oil (or melted butter)

1 tsp vanilla extract

1 cup cherry pie filling (plus extra for topping)

For the Streusel Topping:

½ cup all-purpose flour

¼ cup granulated sugar

¼ cup brown sugar

4 tbsp cold butter (cubed)


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.

  2. In a large bowl, whisk flour, sugar, baking powder, and salt.

  3. In another bowl, whisk eggs, milk, oil, and vanilla until smooth.

  4. Gently stir wet ingredients into the dry mix until just combined. Don’t overmix.

  5. Fold in 1 cup of cherry pie filling, being careful not to over-stir.

  6. Fill muffin cups ⅔ full. Add a small spoonful of extra cherry pie filling on top.

  7. Prepare the streusel by mixing flour, white sugar, brown sugar, and cold butter until crumbly. Sprinkle over muffins.

  8. Bake for 22–25 minutes, until golden brown and a toothpick comes out mostly clean.

  9. Cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or store for later.

Notes

For a brighter flavor, add 1 tsp lemon zest to the batter.

Swap cherry pie filling with blueberry, apple, or peach for variety.
