Description

A rich and comforting French dish that features tender chicken thighs cooked with apples and cream for a delicious, gourmet meal.


Ingredients

  • 4 Bone-in, skin-on chicken thighs
  • 2 Tart apples (e.g., Granny Smith, Honeycrisp)
  • 1/2 cup Calvados (or apple juice)
  • 1 cup Heavy cream
  • 2 Shallots, minced
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh thyme leaves
  • 1 cup Chicken broth (low-sodium)
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear chicken thighs for 5-7 minutes on skin side until golden, flip and sear the other side for 5 minutes. Remove and set aside.
  3. Add shallots and garlic to the skillet, sauté for 2-3 minutes until fragrant.
  4. Deglaze the pan with Calvados (or apple juice), simmer for 2 minutes.
  5. Stir in chopped apples, thyme, and chicken broth, and bring to a gentle simmer.
  6. Return chicken to the skillet, skin-side up. Cover and simmer on low for 20 minutes until cooked through.
  7. Stir in heavy cream and heat through for 5 minutes. Adjust seasoning and serve garnished with thyme.

Notes

Great served with rice or crusty bread, and pairs well with a Chardonnay.
