A rich and comforting French dish that features tender chicken thighs cooked with apples and cream for a delicious, gourmet meal.

- 4 Bone-in, skin-on chicken thighs
- 2 Tart apples (e.g., Granny Smith, Honeycrisp)
- 1/2 cup Calvados (or apple juice)
- 1 cup Heavy cream
- 2 Shallots, minced
- 2 cloves Garlic, minced
- 1 tablespoon Fresh thyme leaves
- 1 cup Chicken broth (low-sodium)
- 2 tablespoons Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Pat chicken thighs dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and sear chicken thighs for 5-7 minutes on skin side until golden, flip and sear the other side for 5 minutes. Remove and set aside.
- Add shallots and garlic to the skillet, sauté for 2-3 minutes until fragrant.
- Deglaze the pan with Calvados (or apple juice), simmer for 2 minutes.
- Stir in chopped apples, thyme, and chicken broth, and bring to a gentle simmer.
- Return chicken to the skillet, skin-side up. Cover and simmer on low for 20 minutes until cooked through.
- Stir in heavy cream and heat through for 5 minutes. Adjust seasoning and serve garnished with thyme.
Notes
Great served with rice or crusty bread, and pairs well with a Chardonnay.
