Instructions

  1. Preheat your oven to 375°F (190°C). Roll out your pie dough and fit it into a 9-inch pie dish. Trim the edges and dock the bottom with a fork to prevent bubbling. Bake for 15-20 minutes until lightly golden.
  2. While the crust cools, in a mixing bowl, whisk together the whole milk, heavy cream, and sugar until they dissolve. Add in the eggs, cinnamon, vanilla extract, and nutmeg, whisking until completely combined.
  3. Carefully pour the custard mixture into the baked pie crust, ensuring not to spill.
  4. Place the pie in the preheated oven. Bake for 45-50 minutes or until the custard is set in the center. A slight jiggle is fine; it will firm up as it cools.
  5. Once baked, remove from the oven and allow it to cool to room temperature. Chill in the refrigerator for at least 2 hours before serving.
