Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with festive paper liners.
- In a large mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes. Mix in the eggs one at a time, followed by the vanilla extract.
- Gradually add the flour mixture into the butter mixture, alternating with milk. Start and end with the flour mix to maintain a light batter. Mix until just combined.
- Gently fold in the diced strawberries, taking care not to overmix.
- Scoop the batter into each cupcake liner, filling them about two-thirds full.
- Place the cupcake pan in the preheated oven and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
