- 400g spaghetti
- 150g pancetta
- 3 large eggs (use yolks only)
- 100g freshly grated Parmesan cheese
- Freshly ground black pepper
- Salt (to taste)
Instructions
- Boil a large pot of salted water; add spaghetti and cook until al dente (8-10 minutes).
- While pasta cooks, dice pancetta and cook in a skillet over medium heat until golden and crisp (5-7 minutes).
- In a mixing bowl, whisk the egg yolks and grated Parmesan cheese until smooth.
- Once pasta is cooked, reserve 1 cup of pasta water then drain spaghetti.
- Add hot spaghetti to the skillet with pancetta; remove from heat and mix in egg and cheese mixture quickly.
- Add reserved pasta water gradually if sauce is too thick; season with black pepper.
- Serve immediately, garnishing with more cheese and black pepper.
