- 1 pound cod fillets
- 2 large Yukon Gold potatoes
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 medium onion, diced
- 2 tablespoons butter
- Fresh parsley (for garnish)
- Salt and pepper (to taste)
Instructions
- Prepare your ingredients: gather, wash the potatoes, and dice the onion and garlic. Cut the cod into 4-ounce pieces.
- Cook the potatoes: boil diced potatoes in salted water for 10-15 minutes until fork-tender. Drain and set aside.
- Sauté the aromatics: melt butter in a skillet over medium heat, add onion and sauté for 3-4 minutes. Add minced garlic and sauté for an additional minute.
- Add the cod: place cod fillets in the skillet, cooking for 4-5 minutes on each side until flaky.
- Make the cream sauce: reduce heat, add heavy cream, and simmer for 5 minutes.
- Combine with potatoes: add cooked potatoes to the skillet and gently toss everything together.
- Serve: garnish with parsley, salt, and pepper before plating.
Notes
For a lighter version, use half-and-half or coconut cream. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
