Ingredients

- 1 cup Cottage Cheese
- 1 cup Oats (blended to a flour)
- 2 large Eggs
- 1 teaspoon Baking Powder
- 1/2 cup Milk
- 1 teaspoon Vanilla Extract
- a pinch of Salt
Instructions
- Blend the Oats until they reach a fine flour consistency.
- In a large bowl, combine the cottage cheese, eggs, milk, and vanilla extract; whisk until well integrated.
- In another bowl, combine the oat flour, baking powder, and salt.
- Slowly add the dry ingredients to the wet mixture; stir gently until just combined.
- Heat a non-stick skillet over medium heat.
- Pour about 1/4 cup of the batter onto the skillet for each pancake; cook for 2-3 minutes, then flip and cook for an additional 1-2 minutes.
- Serve warm with your favorite toppings.
Notes
For a vegan option, use flax eggs or applesauce as substitutes for eggs.
