1 medium yellow onion, diced

½ tsp red pepper flakes (optional, for heat)

1 lb ground beef (80/20, or substitute turkey/chicken)

2 tbsp tomato paste

1 jar (24 oz) tomato-basil pasta sauce

1 can (15 oz) diced tomatoes

4 cups chicken broth (plus more if needed)

1 tsp dried oregano

1 tsp kosher salt (plus more to taste)

810 lasagna noodles, broken into 2-inch pieces (avoid oven-ready noodles)

½ cup heavy cream (optional, for creaminess)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup ricotta cheese

Fresh basil leaves, for garnish


Instructions

  • Cook the aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and sauté until softened, about 3–4 minutes. Stir in garlic and red pepper flakes.

  • Brown the beef: Add ground beef, breaking it apart with a wooden spoon. Cook until browned all over.

  • Build the broth: Stir in tomato paste and let it cook for 1–2 minutes. Add pasta sauce, diced tomatoes, chicken broth, oregano, and salt. Bring to a simmer.

  • Cook the noodles: Add the broken lasagna noodles directly into the pot. Stir to prevent sticking and cook until tender, about 10–12 minutes. Add extra broth if needed.

  • Finish the soup: Stir in heavy cream (if using). Taste and adjust seasoning.

  • Serve: Ladle into bowls and top each serving with mozzarella, Parmesan, ricotta, and fresh basil.

Notes

For a lighter version, use ground turkey and skip the cream.

To freeze, make the soup without noodles and cream; add those fresh when reheating.

Swap in other pasta shapes if you don’t have lasagna noodles.
