  • 8 oz Brie Cheese
  • 1 cup Fresh Cranberries
  • 4 oz Pancetta
  • 2 tbsp Fresh Thyme
  • 2 tbsp Honey
  • 1 Egg (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the puff pastry until it is about 1/8 inch thick and lay it in a tart pan.
  3. Poke holes in the pastry and par-bake for 10 minutes, covering with parchment and weights, then bake for an additional 5 minutes.
  4. Layer sliced Brie over the crust, followed by fresh cranberries, pancetta, and thyme.
  5. Drizzle honey over the top.
  6. Bake for an additional 15-20 minutes until Brie is bubbly and the pastry is golden.
  7. Let it cool for 5 minutes before slicing and serving.
