- 8 oz bowtie pasta
- 1 lb ground beef
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 3 cloves garlic, minced
- 2 tbsp butter
- 2 cups fresh spinach
- Salt and pepper to taste
- Optional: red pepper flakes and Italian herbs
Instructions
- Cook the pasta in a pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
- In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add ground beef to the skillet, breaking it apart with a spatula. Season with salt and pepper and cook until browned, about 5-7 minutes.
- Reduce heat and pour in heavy cream, stirring well to combine and bring to a gentle simmer.
- Add grated Parmesan cheese to the mixture, stirring until melted and smooth. If too thick, add a splash of reserved pasta water.
- Fold in fresh spinach and allow to wilt for 1-2 minutes.
- Gently mix in the cooked pasta, ensuring it’s well coated with the sauce. Adjust seasoning if necessary.
- Serve hot, optionally topped with extra Parmesan cheese and red pepper flakes.
Notes
Opt for whole wheat pasta or lighter alternatives to increase nutritional value. Store leftovers in an airtight container in the fridge for 3-4 days.
