- 4 Chicken Breasts
- 1 cup Dill Pickle Chips
- 1 cup Parmesan Cheese, grated
- 1 cup Breadcrumbs, preferably panko
- 2 large Eggs, beaten
- 1 tablespoon Dill, fresh or dried
- 1 teaspoon Garlic Powder
- Salt & Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine beaten eggs, dill, garlic powder, salt, and pepper; whisk until blended.
- Dip each chicken breast into the egg mixture, then coat with dill pickle chips, Parmesan cheese, and breadcrumbs.
- Place the breaded chicken on the prepared baking sheet with space in between.
- Bake for 20-25 minutes, flipping halfway until the internal temperature reaches 165°F (74°C).
- Let rest for a minute before serving.
Notes
For a healthier option, substitute chicken with tofu or replace eggs with Greek yogurt.
