Description

A quick and delicious chicken dish featuring a crispy coating with dill pickles and Parmesan cheese for a unique flavor.


Ingredients

  • 4 Chicken Breasts
  • 1 cup Dill Pickle Chips
  • 1 cup Parmesan Cheese, grated
  • 1 cup Breadcrumbs, preferably panko
  • 2 large Eggs, beaten
  • 1 tablespoon Dill, fresh or dried
  • 1 teaspoon Garlic Powder
  • Salt & Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. In a large bowl, combine beaten eggs, dill, garlic powder, salt, and pepper; whisk until blended.
  4. Dip each chicken breast into the egg mixture, then coat with dill pickle chips, Parmesan cheese, and breadcrumbs.
  5. Place the breaded chicken on the prepared baking sheet with space in between.
  6. Bake for 20-25 minutes, flipping halfway until the internal temperature reaches 165°F (74°C).
  7. Let rest for a minute before serving.

Notes

For a healthier option, substitute chicken with tofu or replace eggs with Greek yogurt.
