Instructions
- Gather your leftover cooked rice. Ensure it’s not too mushy.
- Whisk together the eggs in a medium bowl until slightly frothy.
- Add rice, chopped green onions, diced vegetables, and seasonings to the egg mixture and combine well.
- Shape the mixture into patties about one inch thick.
- Heat oil in a non-stick skillet over medium heat until hot.
- Fry the patties for 3-4 minutes on each side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
