Description

Transform your leftovers into delicious crispy rice patties that are easy to make and perfect for impressing family and friends.

Ingredients

Scale
  • 2 cups cooked rice (any type)
  • 2 eggs (or flaxseed meal for vegan option)
  • 1/4 cup chopped green onions
  • 1 cup diced vegetables (carrots, peas, or bell peppers)
  • 1/2 cup breadcrumbs (Panko or gluten-free)
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tbsp soy sauce or sesame oil (optional)
  • Oil for frying

Instructions

  1. Gather your leftover cooked rice. Ensure it’s not too mushy.
  2. Whisk together the eggs in a medium bowl until slightly frothy.
  3. Add rice, chopped green onions, diced vegetables, and seasonings to the egg mixture and combine well.
  4. Shape the mixture into patties about one inch thick.
  5. Heat oil in a non-stick skillet over medium heat until hot.
  6. Fry the patties for 3-4 minutes on each side until golden brown and crispy.
  7. Transfer to a paper towel-lined plate to drain excess oil.

Notes

For a healthier version, consider baking the patties instead of frying them. Serve with your favorite dipping sauces.
