- 2 ripe bananas
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 egg
- 1 tsp vanilla extract
- 4 oz cream cheese
- 1 cup powdered sugar
- 2 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Mash the ripe bananas in a large bowl. Mix in the softened butter and granulated sugar until well combined. Add the egg and vanilla extract, and beat until fluffy.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Scoop the dough onto the prepared baking sheet, leaving space between each scoop for expansion.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- In a bowl, beat the cream cheese, powdered sugar, and milk together until smooth and creamy.
- Once cookies are cooled, drizzle the cream cheese glaze over the top.
- Serve warm or at room temperature.
Notes
For a vegan option, substitute the egg with a flaxseed egg and use plant-based butter and cream cheese.
