  • ½ cup unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese
  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Mash the ripe bananas in a large bowl. Mix in the softened butter and granulated sugar until well combined. Add the egg and vanilla extract, and beat until fluffy.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Scoop the dough onto the prepared baking sheet, leaving space between each scoop for expansion.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. In a bowl, beat the cream cheese, powdered sugar, and milk together until smooth and creamy.
  9. Once cookies are cooled, drizzle the cream cheese glaze over the top.
  10. Serve warm or at room temperature.

Notes

For a vegan option, substitute the egg with a flaxseed egg and use plant-based butter and cream cheese.
