Description

A healthy and delicious treat combining dark chocolate and quinoa for a satisfying guilt-free snack.


Ingredients

  • 1 cup quinoa
  • 1 cup dark chocolate (70% cocoa or higher)
  • 2 tablespoons agave syrup or honey
  • 2 tablespoons coconut oil
  • Sea salt to taste
  • Chopped nuts (optional, such as almonds or walnuts)

Instructions

  1. Rinse quinoa under cold water, combine in a saucepan with 2 cups water, bring to a boil, cover, and simmer for 15 minutes. Fluff with a fork.
  2. Chop dark chocolate into small pieces and melt using a double boiler or microwave.
  3. In a mixing bowl, combine cooked quinoa, melted chocolate, coconut oil, and agave syrup; mix until coated.
  4. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and spoon tablespoonfuls of the mixture onto it.
  5. Bake for 10 minutes until set and slightly crispy.
  6. Let cool completely on baking sheet before storing in an airtight container.

Notes

For a nut-free version, use puffed brown rice. For dairy-free, choose vegan chocolate.
