Instructions

  1. Begin by slicing the ribeye steak into thin strips and season with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and bell peppers, sautéing for 5-7 minutes.
  3. Add the steak to the skillet, cooking for another 5-7 minutes until browned.
  4. Reduce heat to low, add cream cheese, and stir until melted and combined.
  5. Preheat the oven to 350°F (175°C). Spoon the filling onto large lettuce leaves, rolling them up tightly.
  6. Place roll-ups in a baking dish, sprinkle with provolone cheese, and bake for 10 minutes until bubbly.
