3 tablespoons of unsalted butter
10 ounces of mini marshmallows
1 teaspoon of vanilla extract
1/8 teaspoon of salt
1/2 cup of crushed peppermint candies or candy canes
1/2 cup of festive mix-ins (optional): mini chocolate chips, dried cranberries, or chopped nuts
1/2 cup of white chocolate chips or melts (optional)
Instructions
Line a 9×13-inch pan with parchment or foil, leaving a bit of overhang for easy lift-out. Lightly butter the parchment and set the pan aside to keep the bars neat and make slicing easy.
In a large saucepan over low heat, melt the butter. Add the marshmallows and stir constantly until melted, smooth, and glossy—about 3–5 minutes. If you see any lumps, keep stirring until they disappear.
Remove from heat. Stir in the vanilla and a pinch of salt. Fold in the crisped rice cereal and any optional mix-ins. Stir until every grain is glossy with marshmallow and evenly coated.
Spread the mixture into the prepared pan. Use a buttered spatula or a sheet of parchment to press firmly and evenly into the layer. Let cool at room temperature for 30–60 minutes, or refrigerate about 15 minutes to speed setting. You’ll know it’s ready when the edges look set and the center gives a slight, but firm, resistance when pressed.
Optional finish: melt the white chocolate chips and drizzle across the top. Sprinkle a few crushed candy canes for extra festivity. Allow the drizzle to set before slicing into squares or festive shapes.
