Instructions
Make the dough: In a mixer or with a hand mixer, beat the butter, granulated sugar, and powdered sugar until light and fluffy, about 2 minutes. Beat in the vanilla.
Whisk together the flour, cornstarch, and salt in a separate bowl. Add the dry ingredients to the butter mixture in two batches, mixing just until a soft, cohesive dough forms. Scrape down the bowl as needed.
Chill the dough: Wrap the dough and chill for 30-60 minutes. This makes it easier to roll and cut clean circles.
Roll and cut: Roll the dough on a lightly floured surface to about 1/4 inch thick. Use a 2-inch round cutter to punch cookies. Re-roll scraps and repeat. Arrange on parchment-lined baking sheets.
Make wells for caramel: Lightly press the back of a small rounded spoon or the end of a wooden utensil into the center of each cookie to create a shallow well. Do this gently so you don't crack the edges.
Bake: Bake at 350°F (175°C) for 12-14 minutes, until the edges are just lightly golden. Remove from oven and let cool on the sheet for 5 minutes, then transfer to a rack to cool completely.
Prepare the caramel: In a small saucepan over medium heat, stir sugar until it melts and turns amber. Remove from heat and whisk in butter, then slowly whisk in cream until smooth. Add a pinch of salt and set aside to cool slightly and thicken.
Fill the wells: Spoon a small dollop of caramel into each well. Let it settle and set a bit so it doesn't run off the cookie edges.
Chocolate coating: In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 20-second bursts, stirring between warms, until glossy and smooth. Dip each caramel-filled cookie halfway into the chocolate or drizzle chocolate over the top. Place back on parchment to set.
Finish and chill: Optional: sprinkle a tiny pinch of flaky salt or crushed pretzels on the chocolate coating before it sets. Refrigerate 15-20 minutes to ensure the chocolate is firm.
