- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons espresso powder
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup dark chocolate chips
- 1/4 cup coffee liqueur
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Incorporate the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, espresso powder, and baking soda. Gradually add this dry mixture to the wet ingredients, folding gently to combine.
- Fold in the chocolate chips and coffee liqueur until evenly distributed.
- Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie. Bake for 12-15 minutes or until the edges are golden brown.
- Let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free version, substitute butter with coconut oil. Don’t overmix the dough to avoid tough cookies.
