Description

Delicious cookies that combine rich coffee flavors with a hint of spirit, inspired by the famous espresso martini cocktail.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons espresso powder
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup dark chocolate chips
  • 1/4 cup coffee liqueur

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Incorporate the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, espresso powder, and baking soda. Gradually add this dry mixture to the wet ingredients, folding gently to combine.
  5. Fold in the chocolate chips and coffee liqueur until evenly distributed.
  6. Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie. Bake for 12-15 minutes or until the edges are golden brown.
  7. Let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free version, substitute butter with coconut oil. Don’t overmix the dough to avoid tough cookies.
