  • 8 oz white chocolate, melted
  • 1 cup fresh cranberries
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 tbsp lemon juice
  • Fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Crush the graham crackers and mix with melted butter until it resembles wet sand. Press into a tart pan.
  2. Bake the crust for about 10 minutes until set and lightly golden; allow to cool completely.
  3. Melt the white chocolate in a microwave-safe bowl in 30-second intervals until smooth and set aside to cool.
  4. In a bowl, beat softened cream cheese and powdered sugar until smooth. Mix in the melted white chocolate, eggs, lemon juice, and vanilla extract until creamy.
  5. Fold in the fresh cranberries evenly throughout the mixture.
  6. Pour the filling into the cooled tart crust and even out with a spatula.
  7. Bake for about 30 minutes until the filling is set but slightly jiggly. Cool completely to room temperature.
  8. Refrigerate for at least 2 hours. Garnish with fresh mint leaves before serving.
