- 8 oz cream cheese, softened
- 8 oz white chocolate, melted
- 1 cup fresh cranberries
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 large eggs
- 2 tbsp lemon juice
- Fresh mint leaves for garnish
Instructions
- Preheat your oven to 350°F (175°C). Crush the graham crackers and mix with melted butter until it resembles wet sand. Press into a tart pan.
- Bake the crust for about 10 minutes until set and lightly golden; allow to cool completely.
- Melt the white chocolate in a microwave-safe bowl in 30-second intervals until smooth and set aside to cool.
- In a bowl, beat softened cream cheese and powdered sugar until smooth. Mix in the melted white chocolate, eggs, lemon juice, and vanilla extract until creamy.
- Fold in the fresh cranberries evenly throughout the mixture.
- Pour the filling into the cooled tart crust and even out with a spatula.
- Bake for about 30 minutes until the filling is set but slightly jiggly. Cool completely to room temperature.
- Refrigerate for at least 2 hours. Garnish with fresh mint leaves before serving.

For a vegan-friendly dessert, use flax eggs in place of regular eggs and dairy-free chocolate.
