Instructions

  1. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced yellow onions and cook gently, stirring frequently, until they begin to caramelize and become golden brown (about 15-20 minutes).
  2. Once the onions are caramelized, add the cup of broth and fresh thyme, scraping up any browned bits. Let it simmer for about 5 minutes.
  3. While the onions are simmering, butter the outsides of each slice of bread.
  4. On the unbuttered side of one slice, add the caramelized onion mixture and a handful of grated Gruyère cheese. Top with a second slice of bread, ensuring the buttered side is out.
  5. Place the sandwich in a skillet over medium heat. Grill for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.
