- 4 medium Yellow Onions
- 3 tablespoons Unsalted Butter
- 8 ounces Gruyère Cheese, grated
- 1 teaspoon Fresh Thyme
- 1 cup Beef or Vegetable Broth
- Salt and Pepper to taste
Instructions
- In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced yellow onions and cook gently, stirring frequently, until they begin to caramelize and become golden brown (about 15-20 minutes).
- Once the onions are caramelized, add the cup of broth and fresh thyme, scraping up any browned bits. Let it simmer for about 5 minutes.
- While the onions are simmering, butter the outsides of each slice of bread.
- On the unbuttered side of one slice, add the caramelized onion mixture and a handful of grated Gruyère cheese. Top with a second slice of bread, ensuring the buttered side is out.
- Place the sandwich in a skillet over medium heat. Grill for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.
- Slice the sandwich in half and serve warm, optionally pairing with tomato soup or a green salad.
Notes
For a healthier alternative, consider whole grain bread and low-fat cheese options. Also, olive oil can be used instead of butter for a healthier fat option.
